Working out of our micro bakery in Appleton, Maine, we are excited to bring our products to the midcoast region of Maine. As a small-scale bakery, we have the opportunity to create artisanal baked goods with a personal touch that can't be replicated by larger operations. Appleton is a small community, and as a micro bakery, you become a vital part of it, providing delicious treats to locals and visitors alike. Operating on a smaller scale also means that you can focus on high-quality, locally sourced ingredients, which is a big draw for customers who prioritize sustainability and supporting local businesses. However, being a micro bakery also means facing challenges such as limited space and resources, and finding a balance between meeting demand and maintaining the integrity of your products.

Our breads are all made by hand using processes that allow for both a delicious and natural product. This type of bread takes time relying on a slow fermentation process that allows the bread to develop in ways you can't find with industrial, store bought bread. By utilizing a natural sourdough starter combined with a slow, cold-rise in our walk-in overnight, our breads have many added health benefits.
WHY USE "WILD YEAST"?
Well, first because it is delicious! Thanks to the use of sourdough, slightly acidic taste notes will develop with nutty aromas that are particularly accentuated during and after baking.
There are several advantages to using natural or wild yeast, but one of the biggest is digestibility. With so much talk today of creating a healthy gut, sourdough bread is one of the original methods of maintaining a healthy gut biome. In fact, the process of slow fermentation triggers a natural process which breaks down many of the complex substances that are present in the bread and transforms them into simple substances, which are more rapidly assimilable by our body. This includes breaking down gluten as well as a lower increase in blood sugar. People that suffer from digestive problems with most industrially made breads and gluten intolerance can often find that they can eat sourdough bread without issue.
Another benefit of sourdough is the increased shelf life of the product. Thanks to the acidity in the bread, in the form of lactic and acetic acid, conservation is increased by preventing the formation of molds or other microorganisms harmful to our health.
